Is it coincidence that this blog is launched on the same day that all of the kids go back to school?
I think not.
BUT, before everyone got up early, got dressed, ate breakfast and headed out the door, we had our traditional (going on 5 years?) Back-to-School Pancake Breakfast hosted by Grandpa John at the Original Pancake House in Laguna Hills.
Like years past the breakfast was planned for Labor Day morning so all of the early bird working dads could join us. So Monday morning we got up really early, got dressed, headed out the door, then met our family for a delicious breakfast.

This year one of the main entertainments besides the food were the coffee creamers -

The food is the next best thing to the company though, and this year was no exception. Abbie had the potato pancakes (which she shared and were DELICIOUS), Porter stayed with the tried and true Chocolate Chip Pancakes, Jack had BACON pancakes (picture pancake ba
tter with A LOT of crumbled bacon in it), my other kids had buttermilk, and some folks even had omelets.
After branching out last year and trying the coconut pancakes with the pineapple syrup, this year I was back to my overall favorite, waffle with fresh strawberries, whipped cream and warm strawberry syrup.
After we were all STUFFED and happy (and now fully awake) we were ready to celebrate Labor Day with a bit of swimming with our cousins while Pete and Dave did a little bit of home improvement.
But before that we took our traditional after-breakfast family photo - this year everyone posed with Grammy Ann's car and her Obama 'O8 bumper sticker

Mmmm. That's our kind of feast!
The common way to have pancakes here is with ricotta in the batter, and served with fruit on top. It is amazing! I'll have to find a recipe and share.
